Lemon Blueberry Balls

Lemon Blueberry Balls

1 cup of pitted medjool dates (winco bulk bins)
1 cup of macadamia nuts (winco)
½ cup of cashews (winco)
1-2 tsp vanilla
Zest of 1 lemon
Juice of 1 lemon
2 tbsp of Almond Butter
1-2 tbsp of chia seeds
2 tsp flax meal (not necessary)
½ cup unsweetened shredded coconut (+ more for rolling) (winco bulk bins)

½ cup Kirkland dried blueberries (Costco)

Combine all ingredients except blueberries in food processor (do dates first then add nuts until combined into crumbs then add the rest). Mix in blueberries. Roll into balls and then roll in unsweetened coconut. Put in fridge.
